Enhancing Nutrition Intake and Reducing Plate Wastage in Nursing Home 

In September 2012, three final-year students from Singapore Polytechnic’s (SP) Diploma in Nutrition, Health and Wellness course interning at AIC embarked on a five-week study to determine the nutritional adequacy in meal provision and  intake at a local nursing home as well as to measure the amount of served food unconsumed by residents. The students then submitted their findings in a poster titled An Observational Study on Meal Provision, Plate Wastage and Nutrient Intake in a Singapore Private Nursing Home which won one of two Best Poster Prizes awarded at the Conference on Healthy Aging in Asia on 4 to 5 March 2013.

DINING PRACTICES FOR RESIDENTS WITH DEMENTIA: Case Studies of Four European Nursing Homes 

During Nov. 2012, the International Association of Homes and Services for the Ageing (IAHSA) and LeadingAge collaborated on a project to examine how four European nursing homes took steps to improve the dining and nutritional experience of residents with dementia. Read more

Visiting Dietitian - Ms Karen Abbey

Ms Karen Abbey, the Dietitian Manager of Resident Support Services, Nambucca Heads Aged Care Facility in New South Wales, Sydney, Australia visited Singapore under the HMDP-ILTC Visiting Expert scheme from 5th to 7th March 2012.

Karen has extensive experience in food service management in aged care facilities. Her current job scope includes overseeing foodservices, managing the cook-chill facility of three satellite kitchens, delivery of food across two campuses, recipe and menu development. She is also responsible for managing Occupational Health and Safety at Nambucca Heads Aged Care Facility. Karen has her own nutrition and catering consultancy and is a dedicated trainer in food services for university level, apprentice and school-based traineeship programmes in Nambucca.

Her qualifications include Bachelors Science (Hon) in Hum Nutrition, Grad Dip Nut & Diet and a Masters Health Science Management. She is currently pursuing a PhD in menu planning in aged care.

During her visit here in Singapore, Karen visited several nursing homes and conducted talks and workshops for our nursing home partners.  If you missed her lectures, you can download her slides here.
